Climbing, hiking, pedalling, paddling – no matter what the self-powered sport of choice, they all require energy. Feeding that internal machine and keeping the liquids topped up is essential. That’s why I take notice of simple, easy and healthy recipes for homemade energy bars and snacks.
I thought I’d stumbled across something new with this one, but my sister said she’s been making these for a while. Why am I always the last to know these things?
Here’s the tasty recipe that – along with a little water – will help you go the extra mile.
Energy Treat Recipe
- Mix together 1 cup chopped dates, 1 cup chopped raw, unsalted cashews and 1/3 cup almond nut butter in a bowl. Shape into 1” to 1 ½” balls and roll in sweetened, long thread coconut.
- Place on tray and freeze.
- Store in ziplock bags in freezer and take out when ready to head out for an outdoor adventure.
Calories per ball: Who cares? After all, you’re working hard and whatever you eat, you’ll burn off. No need to count calories – yet another bonus of being active outdoors.
When you’re ready for a change, you can switch up the dates with raisins or dried apricots, use almonds or pecans instead of cashews, and add peanut butter rather than almond nut butter. You can also add dried cherries, craisins, dried blueberries or go whole hog and throw in a few chocolate chunks.
